Daphnis and Chloe is a culinary herb and spice company dedicated to cooks who are looking for Mediterranean ingredients of the finest quality. They travel the country looking for superior herbs and inspire farmers to believe in forgotten, heirloom varieties. They source from small organic farms across Greece, and they know their farmers by first name.

Wild Thyme Flowers: Thymus Capitatus, a variety that loves Greece’s rocky coastlines, grows into a woody purple shrub. It prospers in specific areas of the Mediterranean and is a hard find even at well-informed spice shops. Our harvesters trim the blossoms one by one, following a laborious process that allows preserving the herb’s aroma for longer. The most advanced tool to ever touch these flowers is a pair of scissors. .49oz

Aegean Isle Oregano: These whole blossoms of oregano come from a small organic farm on an Eastern Aegean island. The Origanum onites varietal has prospered in the region since always, but only a handful of farmers cultivate it nowadays. The reason why such a remarkable herb is so little known remains a mystery! Harvested by hand, dried naturally, and sorted in-house here at Daphnis and Chloe. .32oz

Smoked Chili Flakes: The hot and sweet peppers of Almopia ripen at the end of the season, in September. After being washed and hand-sorted, the fruits are slow-dried on birch wood for 10 days. During this period, the farmers work in shifts guarding the fire night and day, making sure it never goes out. The richly colored, aromatic peppers are then destemmed and crushed manually, giving life to the spice collectively known as “Boukovo.” 1.76oz

Unique Greek Sage: This robust variety of sage (Salvia fruticosa) is found everywhere across the Aegean Sea islands. One of its main differences from common European sage is a more intense taste and fragrance. Interestingly enough, it tends to smell stronger when it grows in arid soils. Our selection comes from an organic farm in Crete, where all herbs are processed by hand. Use in cooking or as a tea. .49oz

Rosemary Leaves: Rosemary is one of these sturdy, universal herbs that can resist well in different parts of the world. What sets this selection apart from other rosemary is the ability to lend a balsamic, gentle piney flavor to meals without being bitter. Some people might find it too delicate, but we prefer it this way. More powerful doesn’t always mean better! .49oz
